Those recipes are mainly for fast grilling.
Use tomato based with molasses for my BBQ stuff.
There's a BBQ place in tough part of town (East Palo Alto) that has famous place run by guy who grew up in LA. His story is that they just got electricity a few years ago and reason for all of the smoked, BBQ meats was to preserve. Has HUGE pile of wood out back and homemade smoker about 8ft x 8ft made out of cinder blocks. Always something hanging in there.
