2 cups dry Great Northern beans – soak over night and follow cooking directions - This is the cheapest way but more labor intensive; or 2 cans of Great Northern Beans – serves 4. (Double recipe if serving 8 people)
½ cup unsulphured molasses
¼ tsp. dry mustard
2 tsp. vinegar
1 Tbs. Worcestershire sauce
¼ cup brown sugar.
¼ jar real bacon bits – or slice 3 – 4 pieces of bacon into ¼ inch dice – fry/ blot/ and add to beans
1 small onion – diced
Generous squeeze of ketchup…. Like about a ¼ cup… just squirt on and eyeball it.
I like to add a few drops of ketchup over the top when ready to bake – for color – don’t mix in.
If using soaked beans, rinse, add water and boil for 1 to 1.5 hrs, rinse in water again.
Mix all in baking dish. Add water to bring level up to near the top of the beans. Bake in 300° oven for several hours (uncovered ) – add small amounts water if they become dry…start watching when the top becomes nicely browned – dark and more like a caramel sauce. It will take 2.5 to 4 hours. The catsup on top will add color
For a large batch – I use 4 cans of beans and double ingredients but cut down on the brown sugar rather than double that.
Leftovers: toast whole wheat bread – spread a layer of cold beans, layer on thinly sliced sweet onions, and top with bacon previously fried – couple of strips. Broil until hot – watch the bread doesn’t burn on the corners.
