Stainless fasteners from Unbrako(tm) are about 80ksi tensile and 40ksi yield (in 316 ss alloy). SAE grade 5 or the metric equivalent (8.8) is rated at 120 ksi (ultimate tensile I believe) Not an exact comparison but far enough off to be really scary if you replace SAE grade 5 or 8 (metric 8.8 or 10.3) bolts/nuts with stainless for a load bearing application. I wrote a better reply earlier, but it got lost during the posting. You'll also have corrosion problems with the material the stainless touches in severe climates. This is amplified if the materials have electric. current flowing thru them (poor choice for starter bolts or battery terminal bolts). Most of the stuff you'll get is 18-8,304 or 303 SS. 316 is a little more expensive (but best corrosion resistance and non magnetic). You won't run into the heat treatable SS at the store. If you find some and install the fasteners dry or leave them in long you won't be getting them out unless you call a machinist. The 18-8 and 300 series is available in fine and coarse threads. Most metrics are special order unless you know a really good hardware store.
