Anti-Lock Brakes
The sensor is at the transmission and works in 2wd only. In '91, the ABS did not have individual wheel sensors. I think '92-up models have full 4-wheel ABS.
HD OD Trans
I don't know when GM started offering the 4L80E on 3/4 ton Subs, but in '91 it was the standard on 2500 series and referred to as "HD Overdrive". The 1500s got the 4L60 (non-"E").

No, only as an add-on to the front AC....
The primary differences, IMHO, between the late square-bodies and the later models are significant:
Big-block available in K2500
Vortec small block available from '96 or '97 - big help!
All-wheel ABS
IFS (not necessarily a durability plus, but more comfortable on the road)
Reduced wind noise
Leather interior trim
Could be an illusion, but the older Subs seem to have more cargo space, maybe due to the built-in compartments in the newer models which tend to narrow the cargo area. A link below shows '91 Sub dimensions, for comparison.
This said, however, I believe the '91 is the most refined of all the square-bodies, and if you can find a good one, you should get acceptable service from it. My '91 V1500 felt from new and still feels "tighter" than my dad's '88 C1500 and a friend's '86 C2500 (454).
